The EU Commission has proclaimed an era of “food safety culture”. In this context, the legal basis and thus the standardization changed: DIN 10514 has been adapted accordingly — and this commentary on the standard has also been revised. The legal framework has been updated in the 4th edition. The commentary refers to the individual clauses of the standard. It provides examples and explanations and thus facilitates the planning and implementation of the legally required hygiene training.
