This document specifies requirements for the planning and construction of facilities in retail establishments and for the hygienic sale of unpackaged food to consumers via self-service. The document describes the specific forms of presentation commonly used for unpackaged food, as well as the equipment and facilities that may be necessary. The document is intended to serve as a guide to avoid any adverse effects on food that may be foreseeable in the context of self-service sales. This document has been prepared by Working Group NA 057-02-01-19 AK "Unverpackte Lebensmittel in Selbstbedienung" ("Unpackaged food for self-service") of Working Committee NA 057-02-01 AA "Lebensmittelhygiene" ("Food hygiene") at DIN Standards Committee Food and Agricultural Products (NAL).
