The standard specifies hygienic requirements for the structural design, equipment and operation of bake-off stations for the preparation and sale of bakery and pastry products. It applies to retail bake-off stations irrespective of the form of selling. In addition, DIN 10535 contains requirements for self-service sales. It does not cover the process of direct sale over service counters. This standard, however, does not apply within the scope of standard series DIN 18865 covering food distribution equipment for commercial kitchens typically used in the field of mass catering and/or food service and/or catering.
