14 companies process per year about 250.00 tons of cocoa beans in Germany. If the net imports of cocoa butter, powder and added masses are taken into account, the German cocoa and chocolate industry processed last year a beans equivalent of a total of 362,757 tons, which represents about 12 % of the world's harvest.This Guideline describes the state of the art of installations for roasting cocoa and producing chocolate liquor. It describes the individual processing stages, names the emissions of air-polluting substances produced and describes processes for their control.The Guideline states the emission level attainable in continuous operation in accordance with the sate of the art and specifies the metrological processes needed to determine these levels.Particular attention is laid on diffuse sources that can be minimized by the application of structural, technical and organizational measures, whereby the environmental conditions for workplaces must not be ignored.
