Working Committee NA 040-05-01 AA "Gasbeheizte Großküchengeräte - Deutscher Spiegelausschuss CEN/TC 106 Gasbeheizte Großküchengeräte" ("Large kitchen appliances using gaseous fuels - German mirror committee CEN/TC 106 large kitchen appliances using gaseous fuels") at DIN Standards Committee Heating and Cooking Equipment (FNH) has prepared this document as part of its standardization work in order to describe the state of the art for commercial kitchen equipment using gaseous fuels as required by the First Ordinance implementing the Federal Immission Protection Act [BlmSchV] and to ensure comparable results when measuring waste gas heat losses. The test specified in this document shall be applied to the indirectly heated commercial kitchen equipment listed. The First Ordinance implementing the Federal Immission Protection Act [BlmSchV] specifies limit values for waste gas heat losses from oil- and gas-fired systems for the purposes of energy conservation and environmental protection. These limit values cannot be achieved for commercial kitchen equipment operated at higher temperatures due to the nature of the cooking process. Commercial kitchen equipment has varying levels of waste gas heat losses as a function of the required cooking temperature. In order to take account of this fact the regulatory authority stipulated in Paragraph 2 of Section 10 that oil- and gas-fired systems for which the limit values for waste gas heat losses cannot be achieved due to their intended function shall be constructed in such a way that they correspond to the state of the art for the respective process or type. This standard serves to describe the state of the art for commercial kitchen equipment and specifies a practical test method in order to obtain comparable results for exhaust gas emissions. It takes the results achieved in current type tests of modern equipment into consideration.
