DIN EN 16282-1 specifies the general requirements for ventilation systems for commercial kitchens. It describes the fundamentals for the planning, design and dimensioning of kitchen ventilation systems and includes methods for calculating air volume flows. Its aim is to ensure air quality, hygiene, thermal comfort and safety in commercial kitchens. The standard applies to commercially used kitchens and food processing areas, but not to private households.
DIN EN 16282-1 describes technical, hygienic and ergonomic requirements for the supply and extract ventilation of commercial kitchens and forms the basis for the other parts of the DIN EN 16282 series of standards.
