DIN 27203-12:2013-06

This standard contains safety specifications. This standard has been prepared by Subcommittee NA 087-00-15-03 UA "Fahrgastraum" ("Passenger area") of Working Committee NA 087-00-15 AA "Zustand der Eisenbahnfahrzeuge" ("State of railway vehicles") of the Railway Standardization Committee (FSF), in coordination with other working committees of the FSF and the German Commission for Electrical, Electronic and Information Technologies (DKE). The standards of the complete works "State of railway vehicles" represent a uniform and system-compatible normative document which specifies the limit state for the safe operation and processes to maintain the target state of standard gauge railway vehicles. All documents of the complete works are listed in DIN 27200, Supplement 1. Wear, failures and other damage influence the operational safety of railway vehicles. Depending on the wear characteristics, application parameters and the current state of the railway vehicles and the cost effectiveness, a maintenance system shall be specified by which it is ensured that the necessary technical target state is maintained. The general field of application of standard DIN 27203-12 is specified in DIN 27200:2011-11, clause 1 and 3.1. This standard applies to the technical and hygienic target state of kitchen equipment in the following railway vehicles: - restaurant, party and special cars, with facilities for the preparation, treatment and distribution of food (for example, on-board restaurant, bistro); - railway vehicles for the accommodation of staff (for example, work trains). The figures of this standard have an exemplary character. This standard shall be used by analogy for kitchen equipment with deviating types of construction and their components. The following modifications have been made with respect to DIN 27203-12:2005-05: a) foreword has been adapted; b) reference to DIN 27200:2011-11, clause 1 and 3.1, regarding the general scope has been redefined; c) update of the normative references and the bibliography; d) Figure 1 and key have been revised; e) requirements in Table 1 have been revised, "extractor hood" has been deleted; f) requirements in Table 2 have been revised, temperature range of consecutive number 2 has been generalized and consecutive number 4 "Thermal overload" has been added; g) editorially revised.
